Jon knows whats up. If you use a skillet and rip your baked eggs apart with a spatula, that has nothing to do with 'scrambled eggs'.
Jon's eggs would've benefited from a knob of Creme Fraiche to cool it all down at the end to stop to cooking process.
Now the downside of Jon’s technique, the dishes. The thin layer of scrambled egg that’s now spot welded to the pot. I enjoy that creaminess but man do I not like cleaning after.
