We played through Yakuza 6 to issue our verdicts on what we think of the game and how we'd choose if we had to do it over again.

As pretentious as it may sound, I wouldn't really trust a review of Yakuza 6 from a complete newbie. Not because opinions would be invalidated by not having played the previous games, but because having context from the previous installments will help highlight what is good or bad comparatively (and that's what a series veteran cares about). Whenever I start another Yakuza game, I think to myself "Hello, Kamurocho, we meet again" but more in the tone of Sound of Silence, because I can't believe we're still here and haven't moved on to a new setpiece.
A novice won't be familiar with all these characters either, and that might get a tad confusing and you won't be able to appropriately appreciate our lord and saviour Akiyama and his magnificence or why Haruka must be protected from all evil.
Going by the demo, Yakuza 6 is definitely not the game I would start on. Yakuza 0 > Kiwami > 4 > 5 are all available on PS4 (4 and 5 through PS Now) and seemed like the perfect track to take when I played through those. But if you don't have 200 hours to throw away; 0 > 5 would probably be fine as well.
Point is, if you're intrigued by the series, play Yakuza 0 (you can probably find it on sale somewhere) and then decide if you want to play more Yakuza, don't start with 6.
Yeah, I disagree completely with the whole "too much story" stuff. You've both jumped into a game that has been built upon the back of 6 other games where the story between them actually does link together. Would watching the last episode of Westworld have any impact without any of the journey? If someone just dropped into the newest season of Game of Thrones would they have any idea what was going on? I realize it's a bit unfair because you guys definitely dont have 200+ hours of time to play through Yakuza 0-5 just to prepare for a review of Yakuza 6 but this isnt a series you can jump into regardless of the synopsis Sega provides for the previous games. It's a story detailing the entire life of Kiryu Kazuma and not watching his 50 years of growth just cheapens the crescendo that is Yakuza 6.
